Chickpea flour gingerbread

You’ll need

170g chickpea flour
1 tsp baking powder
1/2 tsp ginger powder
1 tsp cinnamon
a pinch of salt
1 banana
80g milk
60g neutral oil
50g date syrup
dried fruits & nuts

Directions

Preheat the oven to 180°C and line a rectangular baking pan with parchment paper.

In a large bowl, mash banana until smooth. Add milk, oil & date syrup and stir until combined. Add flour, baking powder, salt & spices and stir until you have a smooth batter.

Pour batter into the pan, sprinkle with dried fruits & nuts. Bake for 25 minutes.
