Miso banana bread

You’ll need

4 ripe bananas
100g melted butter
100g cane sugar
50g miso
1 tsp vanilla extract
3 egg whites
50g milk
250g flour
1 1/2 tsp baking powder
a pinch of salt
1 tsp ginger powder
1 1/2 tsp cinnamon


Preheat the oven to 180°C and line a rectangular baking pan with parchment paper.

Mash 3 bananas using a fork. Add cane sugar, miso & vanilla and stir well. Add butter & egg whites. Add dry ingredients & combine. Pour in milk and stir until smooth.

Pour batter into baking pan. Slice remaining banana in two and place on top of the batter (in a vagina shape).

Bake for 45 minutes or until golden brown and baked through (it will remain very dense though).
