Chunky beetroot dip

You’ll need

50g sunflower seeds
4 pre boiled beetroots
juice of 1 lemon
salt & pepper
1 garlic clove, chopped
1 tbsp balsamic vinegar
2 tbsp coriander, chopped
1 tbsp mustard


Add sunflower seeds to a small pan & toast until golden brown.

Add seeds & remaining ingredients to a food processor. Blitz until combined, yet still chunky. Garnish with more coriander & serve with toast or bread.
