Hummus style cookies

You’ll need

200g canned chickpeas
2 tbsp olive oil
1 tbsp vinegar
2 tbsp tahini
1 tbsp flour
1 egg white
salt & pepper to taste
2 tbsp grated parmigiano
2 tsp dried oregano


Preheat the oven to 180°C and line a baking sheet with parchment paper.

Blitz all ingredients -except oregano- until smooth. Using a spoon, scoop 9 balls onto the baking sheet. Carefully flatten with the palm of your hand.

Sprinkle with more parmigiano & oregano. Bake for 25 minutes.
