Lemon chia pancakes

You’ll need

200g oat milk
1 lemon (zest + juice)
120g flour
1 tsp baking powder
2 tbsp cane sugar
salt
1 tbsp chia seeds
1 tsp vanilla extract
1 tbsp rapeseed oil

Directions

Stir oat milk, lemon zest & juice together and set aside for 5 minutes.

In a large bowl, mix flour, baking powder, salt & cane sugar. Add milk mixture, oil, vanilla & chia and stir until smooth. Set aside for 20 minutes, allowing the chia to swell.

Pour a ladle of batter into a frying pan. Brown on both sides, then repeat for remaining batter.
