No-bake oreo cranberry cheesecake

You’ll need

20 oreo cookies + more for decoration
70g margarine, melted
1 tsp salt
500g cream cheese
200g greek yoghurt
100g white chocolate
60g honey
60g dried cranberries + more for decoration

Directions

Blitz oreos in a food processor until fine. Add melted margarine & salt and stir until well mixed.

Line a round baking pan with parchment paper. Press cookie mixture onto the bottom and press well using the back of a spoon. Chill in the fridge while making the filling.

In a large bowl, mix Greek yoghurt, cream cheese and honey until fluffy. Melt white chocolate and carefully fold it in, along with the cranberries. Make sure yoghurt & cheese are at room temperature, otherwise the chocolate will set too fast & curdle.

Pour cheese mixture into the baking pan. Decorate with more crushed Oreos & canberries, then chill in the fridge for at least 4 hours (preferably overnight).
