There’s something about the delicate combo of lemon & rice flour. Light, elegant and tangy: these lemon rice flour cookies will stick to your tastebuds for a while.
80g cane sugar
1 tsp vanilla extract
1 tbsp chia seeds
zest & juice of 2 lemons
180g rice flour
a pinch of salt
1/2 tsp ginger powder
1 tsp baking powder
Preheat the oven to 180°C and line a baking sheet with parchment paper.
In a large bowl, stir together margarine, cane sugar & vanilla until well combined. Add chia, lemon juice & zest and stir well. Add remaining ingredients and stir until you have a smooth dough.
Using a spoon, drop spoonfuls of the dough onto the baking sheet (with a few centimeters in between them). Bake for 12 minutes or until golden brown around the edges.
