Apple & oat breakfast cake

This apple & oat breakfast cake is easy as hell: just blitz all ingredients together (including a whole apple) and there you go: your brand new breakie fav!

You’ll need

CAKE
1 apple
2 eggs
130g oat flour
50g honey
1/2 tsp cinnamon
1 tsp baking powder
a pinch of salt
100g greek yoghurt
80g peanut butter

FROSTING
200g cream cheese
1 tbsp honey
1/2 tsp cinnamon
roasted peanuts

Directions

Preheat the oven to 180°C and line a rectangular baking pan with parchment paper. Slice apple and remove core (no need to peel).

Start by making the cake. Blitz all ingredients in a food processor until you have a smooth batter. Pour into the baking pan and bake for 25-30 minutes. Allow to cool down before making the frosting.

In a small bowl, combine cream cheese, honey & cinnamon. Spread on top of the cake, then decorate with roasted peanuts.
