Roasted peanuts + miso cookies, that’s a marriage made in a cage!
100g unsalted peanuts
50g cane sugar
1 tbsp miso
½ tsp baking powder
a pinch of salt
Preheat the oven to 180°C and line two baking sheets with parchment paper.
Heat a small pan over medium heat. Roast peanuts until golden brown and fragrant. Blitz in a food processor into fine chunks.
In a large bowl, stir together butter, cane sugar & miso. Add flour, baking powder & salt and stir until smooth.
Scoop the dough onto the two baking sheets. Make your hands slightly wet, then carefully press the cookies down.
Bake for 12 minutes or until golden brown. Allow to cool down to room temperature before eating.
