If you’ve never tried red wine cake, then this is your lucky chance. You won’t believe your ears.. it’s damn good!
300g red wine
45g olive oil
100g cane sugar
zest of 1 orange
2tsp baking powder
1/2 tsp salt
100g dark chocolate, chopped
Preheat the oven to 180°C and line a baking pan with parchment paper.
In a large bowl, mix butter, olive oil, sugar & orange zest until smooth. Add eggs, 1/2 of the wine and combine shortly. Add flour, baking powder & salt and stir until incorporated. Add remaining wine and mix shortly until smooth.
Cut grapes in half. Stir 2/3 of the grapes & chocolate through the batter, then pour into the baking pan. Sprinkle with remaining grapes & chocolate. Bake for 30 minutes.
