Zucchini-broccoli fritters

Squeeze a lil’ ketchup on your zucchini fritters & stuff your face!

You’ll need

1 broccoli head
olive oil
1 onion, chopped
1 garlic clove, chopped
salt
1 tsp chilli flakes
1/2 glass of water
1 zucchini
200g tofu
1 egg
6 tbsp flour

Directions

Chop the head of broccoli into florets. Add 1 tbsp olive oil to a frying pan, add onion, garlic and a pinch of salt & chilli and sauté until fragrant. Add broccoli and water and let it steam until tender and the liquid has evaporated, about 10 minutes. If needed, add more water to make it steam longer.

Mash the tofu until it looks like ricotta cheese. Chop zucchini into rough chunks and blitz in a food processor until finely blended. Add broccoli & tofu and blend until combined. Add egg and flour and blend until smooth. If needed, season to taste with salt and pepper.

Use your hands to shape the zucchini fritters and flatten them to about 1 cm thick.

Cook over medium heat until golden brown. Then flip and cook the other side until golden brown. Serve with any dipping sauce you like.
