Dom Robert is ready to put his teeth into this succulent roasted red pepper pasta 🦷
2 red paprikas
2 tbsp olive oil
2 tbsp sunflower seeds
3 tbsp walnuts, finely chopped
1 tbsp balsamic vinegar
salt & pepper to taste
Preheat the oven to 200 degrees and line a baking sheet with parchment paper. Remove core from peppers and slice into rough chunks. Toss with olive oil, balsamic vinegar & salt/pepper to taste. Roast for 20-25 minutes.
Boil pasta in salted water until fully cooked. Keep 1/2 cup cooking water aside.
Roast walnuts & sunflower seeds in a pan until fragrant. Blitz with roasted peppers & cooking water until smooth. Add more vinegar, salt & pepper to taste.
Stir sauce together with cooked pasta and serve hot or cold.
