This pineapple & date relish is full of antioxidants, fiber & vitamin C. The perfect snack on a piece of toast after a marathon on the dancefloor 🥪 🥪
1 tsp coriander powder
1 tsp cumin powder
350g (canned) pineapple
1 onion , finely chopped
1 red pepper , finely chopped
250ml apple cider vinegar
1/2 tsp chilli flakes
1 tsp salt
80g granulated sugar
70g stoned dates, finely chopped
Add pineapple, red pepper, onion, dates and vinegar into a saucepan pan along with the spices, vinegar, chilli flakes and 1 tsp salt.
Bring to the boil, stirring, then cover and simmer for 10 mins. Add the sugar, and let it simmer for a further 15-20 mins, uncovered, until the mixture is softened but still has a bit of crunch.
Fill a jar and store in the fridge for up to 4 weeks.
