Sponge cake

One of my pleasures in life is to indulge into my control-freakness… and that includes cleaning, cleaning, cleaning! @nympho_menage

You’ll need

CAKE
140g flour
120g sugar
1 tsp cornstarch
3 eggs
125g butter
45g lemon juice
zest of 1 lemon
a pinch of salt
1/2 tsp baking powder
1 tsp vanilla extract
green and yellow food coloring

MERINGUE SOAP
1 egg white
25 g sugar
1/2 tsp lemon juice
a pinch of salt

Directions

Preheat the oven to 180°C and line 2 square baking pans with parchment paper. Start by making the cake batter. In a large bowl, beat butter, sugar and vanilla until fluffy. Add eggs, lemon juice & zest and stir until incorporated. Then add dry ingredients and stir until smooth.

Pour half of the batter into another bowl, and add green/yellow food coloring to both batters until it has reached the desired colour. Spread the batter evenly across both baking pans, then bake for 20 minutes. Allow to cool down completely.

Trim the edges off the cake, then place the green cake on top of the yellow cake. Slice into sponge-like rectangles.

Next, make the meringue by carefully whipping all ingredients in a clean bowl until frothy. Serve with the sponge cake.
