Cottage cheesecake with strawberry syrup

You’ll need

CRUST

140g breadcrumbs
30g cane sugar
80g melted butter
1/2 tsp cinnamon

CHEESE FILLING

500g cottage cheese
200g cream cheese
80g honey
2 eggs
1 tbsp vanilla extract
1 tbsp cornstarch

STRAWBERRY SYRUP

250g frozen strawberries
1 tbsp honey
70g water

Directions

Preheat the oven to 180°C and line a round baking pan with parchment paper. Start by making the crust. Combine breadcrumbs, cane sugar, butter & cinnamon. Pour the mixture into the pan and press well with the back of a spoon. Bake for 10 minutes.

Meanwhile, make the filling. Combine all of the ingredients and whip until fluffy. Pour over the crust, then bake for 60 minutes. Allow to cool down completely in the oven.

Before serving, make the strawberry syrup. Combine frozen strawberries, honey and water in a saucepan. Turn on the heat and let it bubble for 10 minutes, or until cooked. Mash into a chunky syrup and pour over the cheesecake.
